In the case of my '68 plus 1 Chevy truck, the engine is from a '72 Suburban, the transmission is from a '74 Suburban and the ball joints, springs and all bushings have been replaced. The radiator is from an '82 Suburban and the drivers door is from a '71. The rest is pretty much original including the rust.
In the case of the Landcruiser, the engine was replaced with a SBC 350, the drum brakes were converted to 4 wheel discs, but the trannie is from a 76, the transfer case is original the rear axle is original, the front axle is an 81, the radiator is original, etc.... Of course, most of the cruiser did come from the parts bin, the parts are that old. I started with basically a running frame and body parts.
2.60 a frickin gallon! 210598 Jeep Cherokee, 185,000 miles, runs great, no sign of needing major repairs such as running gear, engine, etc...
All years quoted (except the vehicles) are approximate and from memory.
I don't consider either one of them to be 'restored' in that sense. 'Maintained' is the word that comes to mind. ;)
