If you have to leave on the M11 anyway then straight up the A1 is probably sensible. Just make sure you get north of Blyth before the afternoon rush hour, otherwise you are going to be stuck at the roundabouts for the rest of your natural life!
The A1 south of Newcastle is fine, the A1 north of Newcastle is mostly fine. However you have the bastard western bypbutt sitting in the middle of all that. Hit that any time between 3.30 and 6.30 and you will grind to a steaming halt! The tunnel is even worse.
So you have the option of taking the A66 across to the M6 at Scotch Corner. But it would be better if you could delay your journey a couple of years so they can finish dualling the road.
The S-C between Morpeth and Alnwick is always a pain because it's so busy. However north of Alnwick it is usually reasonably okay, once you get across the border there are a few dualled sections, then on the run into Edinburgh you have the new dual carraigeway section which is quite fast (but with plenty cameras).
What the LMe approaching roundabout in L2 of 2, indicator on and both lanes empty except for me intending to turn right. Car pulls off the roundabout and stops on the same road, facing towards me...
My advice would be, set off as early as you possibly can, and absolutely cane it until you get North of Newcastle, then find somewhere to stop and relax for a bit and take a leisurely drive up to Edinburgh... have fun!
