It is definitely an off-the-beaten-path route. I did the Baie-Comeau to Labrador City-Wabash part only.
It's remote, but the terrain does not feel amazingly wild, compared to Yukon highways. The landscape is mostly bland low hills with boreal forest, just like you can find a few hours north of Toronto.
There is still a fair amount of truck traffic. There's a long section south of Fermont where the road crosses and recrosses the rail line, which rather takes away from the remote wilderness aspect.
The route from Wabash to Goose Bay may feel considerably more remote; I would like to see some day.
Doubt it. I did the drive in 2000 in an '87 K car. Too bad I had the 195-60-15 H-rated tires on the car; even dropping the tire pressure didn't help on the rougher gravel sections. If I had softer high-profile tires (195-70-14 would be ideal) at a lower pressure, I would have ventured on to Churchill Falls.
Another good northern Quebec road trip is going up to James Bay: vehicles. The Route de Nord cutoff to Chibougamau is a bit rougher, but also K-car-okay (this time I had the softer high-profile tires); I did that route in, umm, 2003 or 2004. Didn't venture on the Trans-Taiga, though.
