Your Spanish licence is valid for 3 years after you move to the UK provided the Spanish one itself remains valid.
At any time, you can convert to a full UK one. You may wish to do so before the 3 years are up as it makes insurance easier and cheaper to obtain. Also, your Spanish licence may require you to be a Spanish resident.

To apply, you need the following:
1. Form 'D1'. Available to order online, or pick up from major post office. 2. A permanent residential address 3. Idenbreasty documentation (usually a pbuttport or European state ID card) 4. Pbuttport sized photo. 5. Fee (38 pounds) 6. Spanish driving licence.
Do not worry about sending off your Spanish licence. UK driving laws do not require you to carry your licence at all times. If the police ask to see your licence, the fact that the DVLA have it is an acceptable excuse for not showing them.
If you don't send them a pbuttport, you have to do a complex process of countersigning the application which is best avoided.
